Course Description

A Taste of Hawaii | Learn about the cuisine and the people of Hawaii who have influenced the flavors prevalent today. Explore a brief history of Hawaii and how its history has influenced Hawaiian flavors. Prepare, taste and evaluate Hawaiian dishes. Gain an understanding of different types of Hawaiian dishes. $85+ includes $40 fee. Note: Students must wear closed-toe shoes and long pants.

Learner Outcomes

Identify how history influenced Hawaiian cuisine; Recognize the importance of mise en place, getting ingredients together, being prepared; Demonstrate the safe usage of professional kitchen hand tools and utensils; Demonstrate proper kitchen safety and sanitation procedures; Develop culinary skills used in different Hawaiian dishes; Evaluate the different Hawaiian flavors in the dishes prepared.
