Course Description

Intermediate Cake Decorating | Learn piping and scripting skills. Practice designs including flowers, swags, bows and other piped decor. Apply concepts of color and composition to produce your signature creation. $85+ includes $40 fee. Note: Students are required to wear closed-toe shoes and long pants.

Learner Outcomes

Identify tools used in cake decorating; Recognize the importance of mise en place, getting ingredients together, being prepared; Demonstrate the safe usage of professional kitchen hand tools and utensils; Demonstrate proper kitchen safety and sanitation procedures; Identify techniques of cake composition and assembly; Produce classic icings and fillings; Identify the structure of the traditional finished cake; Practice the basics of frosting, masking, piping and finishing; Practice the use of pastry bags and paper cones for decorating.
