Course Description

Beyond Basic: Elevating Chicken Cuisine | Expand your knowledge of this versatile, healthy and affordable food. Prepare new and classic recipes to make weeknight meals a breeze and fancy dinner parties special. Learn how to butcher a whole bird and roast it perfectly. $85+ includes $40 fee. Note: Students must wear closed-toe shoes and long pants.

Learner Outcomes

Recognize the importance of mise en place, getting ingredients together; Demonstrate the safe usage of professional kitchen hand tools and utensils; Demonstrate proper kitchen safety and sanitation procedures; Learn and practice trussing a chicken; Learn to butcher a chicken and debone a legs and thighs; Apply proper technique for preparing and cooking the recipes; Demonstrate proper understanding of appropriate cooking methods; Critique the recipes you prepared in class.
