Course Description

Breakfast Pastries | Sample and learn to make classic breakfast pastries. Incorporate French techniques into traditional home-style treats. $100+ includes $40 fee. Note: Students must wear closed-toe shoes and long pants.

Recognize the importance of mise en place, getting ingredients together; Demonstrate the safe usage of professional kitchen hand tools and utensils; Demonstrate proper kitchen safety and sanitation procedures; Apply proper technique for preparing and cooking the recipes; Demonstrate proper understanding of appropriate cooking methods; Shape, proof and bake assorted enriched doughs; Explore concepts of texture and flavor in breakfast pastries; Compare the functions of ingredients in assorted enriched doughs; Produce assorted classic enriched doughs; Critique the recipes you prepared in class.
