Course Description

French Cuisine: Foundations and Finesse | Learn to cook with the flair and sophistication inherent in French cuisine. Sample gourmet recipes. Experience the ideas, aromas and tastes from the different regions of France, from Charente to Provence. $85+ includes $40 fee. Note: Students must wear closed-toe shoes and long pants.

Recognize the importance of mise en place, getting ingredients together, being prepared; Demonstrate the safe usage of professional kitchen hand tools and utensils; Demonstrate proper kitchen safety and sanitation procedures; Identify ingredients used in French cuisine; Apply traditional culinary techniques in the preparation of classic French food; Produce assorted French recipes; Demonstrate proper kitchen safety and sanitation procedures.
