Course Description

Watch an HCAT chef demonstrate making a variety of homemade cheeses. Learn the fundamentals of cheese production, from raw milk to a delicious finished cheese. Cover all the steps of the process for soft and semisoft cheeses in this online course. $35+ includes $10 fee.

Learner Outcomes

Identify ingredients used to make cheese; Recognize the importance of mise en place, getting ingredients together; Observe the safe usage of professional kitchen hand tools and utensils; Observe the process of cheese making in a variety of experiments; Understand the environment in which cheese products are most productive; Discuss the necessary sanitation of cheese production, and which practices are in contrast to standard food safety; Review the scientific processes occurring during the coagulation of dairy product; Discuss the recipes on the online discussion board; Apply proper technique for preparing and cooking the recipes at home.
