Baking Basics: Biscotti | Learn the techniques necessary to produce perfect biscotti, the most-popular twice-baked cookie, from the classic to the exotic. $100+ includes $40 fee. Note: Students must wear closed-toe shoes and long pants.

Learner Outcomes

Identify ingredients used in biscotti; Recognize the importance of mise en place, getting ingredients together; Demonstrate the safe usage of professional kitchen hand tools and utensils; Demonstrate proper kitchen safety and sanitation procedures; Apply proper technique for preparing and baking the recipes; Demonstrate proper understanding of appropriate baking methods; Critique the recipes you prepared in class.
