Course Description

Sweet and Savory Crepes | Perfect the art of making sweet, savory and buckwheat crepes. Create a menu of assorted savory appetizer rolls and fruit crepes. $85+ includes $40 fee. Note: Students must wear closed-toe shoes and long pants.

Recognize the importance of mise en place, getting ingredients together; Demonstrate the safe usage of professional kitchen hand tools and utensils; Demonstrate proper kitchen safety and sanitation procedures; Apply proper technique for preparing and cooking the recipes; Demonstrate proper understanding of appropriate cooking methods; Identify desired texture and method for making crepes; Prepare a variety of crepe fillings, both sweet and savory; Critique finished product for texture, flavor and eye appeal.
