Course Description

Develop your culinary skills under the mentorship of team coaches to craft a signature dish for professional competition. Professionalism, time management, flavor development and culinary technique will be emphasized. $35 includes $10 fee. Note: Limited competition slots will be filled at the discretion of team coaches. Students must have HCAT uniform and knife kit.

Learner Outcomes

Assess skills of culinary team members; integrate team strengths into competition format; Develop competition quality culinary products; Organize production sequences to meet competition time limitations; Produce complete menu for integration into competition packet; develop plating and presentation skills; demonstration teamwork during group and individual production; participate in critique and evaluation processes during menu development
